Chicken Adobo (Philippines)



Chicken Adobo, a beloved dish from the Philippines, embodies simplicity and bold flavors. Ingredients:

  • 1 kg chicken pieces (thighs and drumsticks)
  • 1 cup vinegar (cane vinegar or white vinegar)
  • 1/2 cup soy sauce
  • 1 head garlic, minced
  • 1 onion, sliced
  • 3-4 bay leaves
  • 1 teaspoon whole peppercorns
  • 1 tablespoon cooking oil
  • 1 cup water
  • Salt to taste

Preparation Method:

  1. Marinate the Chicken:

  • In a large bowl or container, combine the chicken pieces, minced garlic, sliced onion, soy sauce, vinegar, bay leaves, and whole peppercorns. Mix well to ensure the chicken is coated evenly in the marinade.
  • Cover the bowl or container and marinate the chicken in the refrigerator for at least 30 minutes, or ideally overnight, to allow the flavors to meld together.
    1. Cook the Chicken Adobo:

    • Heat cooking oil in a large pan or Dutch oven over medium heat.
    • Once the oil is hot, add the marinated chicken pieces (reserve the marinade) and cook until they are lightly browned on all sides, about 5-7 minutes.
    • Pour in the reserved marinade and water. Bring the mixture to a boil.
    • Reduce the heat to low, cover the pan, and let the chicken simmer for about 30-40 minutes, or until the chicken is tender and cooked through. Stir occasionally.
          1. Finish and Serve:

          • Once the chicken is cooked, uncover the pan and increase the heat to medium-high. Allow the sauce to reduce and thicken slightly, about 10-15 minutes.
          • Taste the sauce and adjust the seasoning with salt if necessary.
          • Once the sauce has thickened to your desired consistency and the flavors have melded together, remove the pan from the heat.
          • Serve the Chicken Adobo hot with steamed rice, garnished with sliced green onions or chopped fresh cilantro if desired.
