Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Vegetable oil for frying

For the Tomato Sauce:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

For Assembly:

  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Preparation Method:

  1. Prepare the Chicken:

  • Preheat the oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper on both sides.
  • Set up a breading station with three shallow dishes: one containing flour, one containing beaten eggs, and one containing a mixture of breadcrumbs and grated Parmesan cheese.
  • Dredge each chicken breast in the flour, dip into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
  • Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded chicken breasts until golden brown on both sides, about 3-4 minutes per side. Transfer the chicken to a paper towel-lined plate to drain excess oil.
          1. Prepare the Tomato Sauce:

          • In the same skillet used to fry the chicken, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.
          • Stir in the crushed tomatoes, dried oregano, and dried basil. Season with salt and pepper to taste. Simmer the sauce for 10-15 minutes, allowing the flavors to meld together.
            1. Assemble and Bake:

            • Spread a thin layer of tomato sauce in the bottom of a baking dish. Place the fried chicken breasts on top of the sauce.
            • Spoon additional tomato sauce over each chicken breast, then sprinkle with shredded mozzarella cheese and grated Parmesan cheese.
            • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through.
            • Garnish with fresh basil leaves before serving.

                  1. Serve:

                  • Serve the Chicken Parmesan hot, accompanied by spaghetti or garlic bread, and additional tomato sauce on the side if desired. Enjoy the comforting flavors of this Italian classic!
