Originating as a popular bar snack, Chicken Sisig has evolved into a beloved comfort food enjoyed by people of all ages across the Philippines, embodying the country's vibrant culinary culture and the art of transforming simple ingredients into a mouthwatering masterpiece.
Ingredients:
- 500g chicken breast or thigh fillets, diced
- 1 onion, finely chopped
- 3-4 green chili peppers (siling haba), finely chopped
- 2-3 red chili peppers, finely chopped (optional for extra heat)
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons calamansi juice (or lemon juice)
- 1 tablespoon mayonnaise
- 1 tablespoon butter or oil
- Salt and pepper to taste
- Fresh calamansi halves for serving (optional)
- Chopped green onions and crispy fried onions for garnish
- Sizzling plate (optional)
Preparation Method:
Preheat Grill:
- Preheat your grill or grill pan over medium-high heat.
Grill Chicken:
Season the diced chicken with salt and pepper. Grill the chicken pieces until they are cooked through and slightly charred, about 5-7 minutes per side. Remove from heat and let them cool slightly.
Chop Chicken:
- Once cooled, finely chop the grilled chicken into small pieces. Set aside.
Sauté Aromatics:
In a large pan, melt the butter or heat the oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the chopped onions and cook until translucent.
Add Chilies:
Stir in the chopped green chili peppers and red chili peppers (if using). Sauté for another 2-3 minutes, or until the peppers are slightly softened.
Mix Chicken:
Add the chopped grilled chicken to the pan. Stir well to combine with the aromatics and chilies.
Season and Sizzle:
Pour in the soy sauce and calamansi juice (or lemon juice). Stir in the mayonnaise. Cook for an additional 3-4 minutes, allowing the flavors to meld together and the mixture to sizzle.
Serve Hot:
Transfer the Chicken Sisig to a sizzling plate, if available, or serve it directly from the pan. Garnish with chopped green onions and crispy fried onions. Serve hot with fresh calamansi halves on the side for squeezing over the sisig
